Starter:

Smoked Hampshire trout with horseradish crème fraîche and Alresford watercress leaves

Terrine of Hampshire ham hock with pickled vegetables and sweet mustard sabayon 

Cured duck with pomegranate and baby leaf salad

 

Main:

Sixteen hour braised Hampshire beef short rib with potato mash, baby watercress and red wine jus 

Roast guinea fowl with duck fat roast potatoes & buttered leeks

Caramelised onion and Somerset cheddar tart with mixed leaf salad (v) 

 

Dessert:

Traditional Eton mess with New Forest berries 

Lemon tarte with shaved citrus and crème fraîche 

Triple chocolate pudding with amaretto crumb
